Mattar Tofu 🌶️  🌿 Welcome to episode 6 of “what I cooked for myself after a long day of Teaching”. A series where I showcase quick, efficient and delicious food to cook after a long day at work no matter your profession.  I had a block of tofu in the fridge and thought it would be the perfect substitute for the classic “mattar paneer” - a classic pea and paneer (tofu in this case) curry in a thick tomato-base sauce.  Ingredients  200g pressed firm tofu 50g frozen peas 1 large diced onion 2 large chopped tomatoes 1 tsp chopped ginger 3 chopped garlic cloves 3-4 curry leaves 2 sliced curry leaves 1/8 tsp chilli flakes 1 tsp cumin seeds 2 tsp red chilli powder 1 tbsp turmeric  1 tsp garam masala 1 tbsp tomato puree Chopped coriander  Dried fenugreek  Salt to taste Method  🌶️ Begin by adding 1 tsp of chilli powder, 1 tbsp of oil and 1 tbsp of chopped coriander to the tofu. Mix well and airfry at 180C for 15 minutes.  🌶️ In a pan sauté the cumin, curry leaves, ginger, garlic, chilli flakes and green chilli. 🌶️ Add the onions and once they begin to soften add the tomatoes. Cook till the tomatoes soften. 🌶️ Transfer everything into a blender and blend to create the base sauce.  🌶️ Hear the sauce in a pan and add the dry spices, tomato puree, salt, peas and some water to loosen the gravy (I added around 50ml).  🌶️ Once it begins to reduce add the tofu, dry fenugreek and coriander. Cook for 15 minutes on a low heat.
