ONE PAN ROAST with chipotle lime sauce. . Checkout my profile for more easy high protein lowcarb recipes. . This roast will help you keep quality, tasty protein on hand all week long. Takes just 1 dish, 5-10 minutes of prep max, and is super versatile for easy power bowls, tacos, salads, quesadillas, you name it.  . Feel free to double/triple this recipe depending on your situation at home. . Here is how to make it: . 1.Preheat your oven to 350F. . 2.Start with 2.5lbs chuck roast and add it to an oven safe dish. . 3.Season both sides of beef with a couple pinches salt & fresh pepper. Season each side with 1/2 tbsp smoked paprika & 1/2tbsp Thyme. If yours is more than 2.5lb aim for about an hour per pound + 30 mins. So if its 3 lbs, 3.5 hrs, etc. . 6. After the initial 2.5-3 hours, remove from the oven, shred the beef using two forks, mix well with the drippings, then put back in the oven at 375F for 45 mins to 1 hour. Shred again when you remove from the oven. . 7.To make the sauce, in a small food processor 4 TBSP sour cream or thick greek yogurt, 1 or 2 of the chipotle adobo peppers from the can, and 1 tablespoon of the adobo sauce from the can, a couple pinches salt, and the juice of 1 small lime. Give it a good pulse, then give it a taste and adjust 8.Devour as is with the sauce, some avocado, fresh cilantro, or whatever toppings you want. Store for upto 5 days in the fridge. .
