Gekochte Kartoffeln pressen. Rohe Kartoffeln sehr fein reiben und in einem Küchentuch mehrmals kräftig ausdrücken. Mit Ei, Kartoffelstärke und Salz verkneten, bis eine formbare Masse entsteht. Bei Bedarf etwas mehr oder weniger Stärke verwenden. 3. Kartoffelmasse in 6 Portionen teilen, jeweils um eine Fleischrolle geben und gut verschließen. Mit Kartoffelstärke bestäuben. 4. Salzwasser aufkochen, Kartacze hineingeben und sobald sie oben schwimmen, die Hitze reduzieren. Noch ca. 20 Minuten sanft köcheln lassen. 5. Speck und Zwiebel knusprig anbraten.
