I’ve been particularly loving Eggland’s Best eggs since they have 6x more Vitamin D, 25% less saturated fat, and more than double the Omega-3s & Vitamin B12 compared to ordinary eggs. Check out the recipe below! Recipe (makes 4 tostadas): - In a skillet over medium heat, sauté 2 minced garlic cloves in a bit of olive oil until fragrant, about 1 minute. - Add 16 oz of drained and rinsed pinto or black beans, 4 oz can of green chiles, 1 tbsp lime juice, 1 tsp chili powder, 1/4 tsp cumin, salt, and black pepper. - Remove from the pan and crack 4 Eggland’s Best fortified eggs one at a time into the skillet and cook until preferred doneness. - Preheat oven to 400˚F. Spray both sides of each of 4 corn tortillas with olive oil cooking spray. Place tortillas on a sheet pan and bake for 4 min on each side or until lightly browned on the edges and crispy. - To assemble the tostada, add beans, pico de gallo (I made my own, but you can use store bought to make it easier), avocado, lettuce, and eggs. Top with cilantro, cotija cheese, and your fave hot sauce! #easybreakfast
