@brittany.khamille: if you saw the accidnetal draft post of this- could you be bribed with pancakes to forget it existed?👀 pls. 🫐🥞Blueberry Pancakes 🥞🫐 3/4 cup AP flour pinch of salt 1 teaspoon baking soda 2 tablespoons powdered sugar 2 eggs 2/3 cup buttermilk 1/3 cup water grated lemon rind (from about half a lemon) 2 tablespoons butter 2 tablespoons shortening about 2 cups blueberries 1. Sift the flour into a bowl & add in the salt, sugar, & baking powder. Sift again then set aside. 2. In another bowl, beat the eggs lightly. Then mix in the buttermilk, water, & lemon rind. Make a well in the middle of the dry ingredients & pour the wet into the dry. 3. then mix- BUT BARELY MIX IT!! for fluffier pancakes, just combine until you don’t see dry flour. LUMPS ARE OKAY!! 4. In a cast iron griddle, melt the butter & shortening. Pour in a little of the batter (maybe about an 1/8-ish cup??) add some blueberries and top with just a little more batter.
