INGREDIENTS - 6 hash browns 3 potatoes 1 egg 3 tbsp flour 1 tsp mixed dried herbs 3 garlic cloves (minced 1/4 tsp ground pepper A good pinch of salt Neutral oil to fry 1.Peel and grate the potatoes. Place in a clean tea towel/cloth or kitchen pepper and squeeze out as much water as possible 2.Add the egg, flour, herbs, salt and pepper to the potato and mix to combine - don’t be afraid to use your hands here to bring it together. 3.Form the mix into 6 hash brown patties, nice and think (around 2cm thick so they cook through) 4.Heat the oil on a medium-hugh heat, you can drop a piece of potato in to check if it is ready, it should gently bubble when added. 5.Add the hash browns to the pan (don’t over crowd as you will bring the temperature of the oil down). Cook for 4-5 minutes on each side until a deep golden brown. 6.Remove the hash browns from the pan and place on some kitchen paper to soak up the excess oil.
