Recipe: 3-ingredient Lemon Broken Gel 🍋 Save this recipe for the next time you need a broken gel 💛 My very fave lemon broken gel that adds the most zesty flavor to any pastry! It really has the smoothest texture, unlike any other gel or cream if you ask me. I like to use the broken gel to add a pure lemon flavor and add a smooth texture. The flavor is very lemony and fresh so I usually pair it with milder flavors to balance the acidity 🍋 Ingredients (fits as an insert in a 16 cm diameter cake): • 100 ml lemon juice • 120 g caster sugar • 2 1/4 (2.25) tsp agar agar (has to be agar agar, other setting agents won’t work in the same way) Instructions: 1. Heat lemon juice, sugar and agar agar in a small sauce pan. Boil the mixture for approx. 1-2 minutes while whisking to prevent it from burning. 2. Pour the gel in plastic container and put it in the fridge so the broken gel can set fully. 3. Put the gel in a tall narrow plastic pitcher and hand blend with an immersion blender until it is smooth and clump-free. 4. Put the gel in a pipping bag a fill/decorate your cakes!
