You can also find a detailed version on my Samsung Food profile, the link is in my bio! 🧷 Ingredients 🧈 For the Sponge Cake (Génoise): 	•	5 eggs 	•	1 pinch of salt 	•	150g white sugar 	•	150g sifted flour 	•	1 tbsp liquid vanilla For the Cream: 	•	500g mascarpone 	•	400ml heavy cream (30% fat) 	•	50g icing sugar 	•	3 tbsp pistachio paste For Garnish and Decoration: 	•	3 tbsp pistachio paste 	•	70g crushed pistachios 	•	250g raspberries 	•	Rose petals Instructions 📜 Sponge Cake: 1.	Preheat your oven to 200°C (about 390°F) and prepare a baking sheet. 2.	Separate egg whites and yolks. 3.	Whip the yolks with sugar and vanilla until creamy. 4.	In another bowl, beat the egg whites with a pinch of salt until stiff peaks form. 5.	Gently fold the beaten whites into the yolk mixture using a spatula. 6.	Carefully incorporate the sifted flour. 7.	Spread the batter on the baking sheet and bake for 8 minutes. 8.	Immediately roll the sponge cake with parchment paper to give it a log shape, then wrap it in cling film. Cream: 1.	Chill 400ml of heavy cream and the beaters in the freezer for 15 minutes. 2.	Whip the cream, then blend in mascarpone, icing sugar, and pistachio paste towards the end. Assembly: 1.
