AguaChile Rojo  I’m finally getting to use this beautiful molcajete from @masienda 🥲 Ingredients: 1/2 lb shrimp, cleaned- deveined.  2 guajillo chili 2 morita 4 Chile de arbol  3 cloves garlic  3/4 cup lime juice  1/2 of a red onion 2 Persian cucumbers  3 tbsp maggi seasoning- if you’re using jugo maggi just add it to taste since it’s slightly stronger  Mayonnaise with lime juice Tostadas or chips  Other optional add ons: avocado and cilantro  Directions: Clean and devein your shrimp. Cut it in half lengthwise and reserve.  Remove the seeds from the guajillo, I left the seeds in the other two. Toast the chilis for 3-4 minutes until lightly browned all around. If using a molcajete grind the garlic, add the dried chilis and grind once more. Once you have a thick paste, add a touch of lime juice to help grind it out some more and make it super smooth. Add the rest of your lime juice and maggi then mix. Alternatively: throw it all in the blender until smooth.  Add your shrimp to this marinade and let it sit for 15-20 minutes in the fridge. The longer you let it sit the more the shrimp will “cook” and become firmer.  While your shrimp is “cooking” slice your onion and dunk it in ice water for 5 minutes to crisp it up and get rid of a little of the raw onion bite. Slice your cucumber.  Mix everything together and serve with your desired toppings, Mayo, avo, and cilantro.  A bunch of people recommended the Mayo to me on a previous video, and they were right. It’s a game changer.
