It is a flavor additive that gives just about anything you put it in more of an umami, ‘meaty’ taste. Traditionally, It was not unusual for Northern Pho vendors to add MSG into their broths to give it that extra little zip. These days you can often order your pho without MSG if you don’t like the taste, or are sensitive to it. In general, you may not notice it at all unless you are familiar with its taste.
