Could try an infrared thermometer and aim it in the vents of the disk, if its not clean bare steel it can measure it pretty accurate, just don't aim on shiny steel or aluminium

try using a pyrometer. If you want to know where the detected temperature is, use a simple tachometer to estimate the angle of the rotor

Fluid temperature is what you are really after as thats what matters. Get a t peice fitting on the hose and temperature sender. No need to keep modifying pads then and get more useful info.

You need to add a pt100 at the TC connection. It’s called Cold Junction Compensation. This will correct the temperature

You want a 'brake disk rubbing thermocouple', what I've used before and removes the lag 👍
