Episode 5: DILL PICKLE 🥒 This flavour has been requested SOO many times…I had to give it a try! @Hercules Noble Food pulled off an incredible looking Pickle Sourdough in his ‘Will It Sourdough?’ series a couple weeks back so I also drew inspiration from his bake! I promised to show the good, the the bad and the ugly with this series and while the taste was spot on in the pickle department (seriously so good!!) the rise was lacking and some areas of the focaccia didn’t bake properly 😭 I realised after I mixed the dough that the vinegar in the pickling liquid may have interacted negatively with the yeast (vinegar is antibacterial so it can kill yeast in large quantities!)… this would help to explain the noticeable lack of rise. Next time I’d stick to water in the dough, though I would still put the pickle juice over the top of the dimples before baking as this really does add to flavour and texture (try it with olive brine sometime!)… The middle of the focaccia was a bit undercooked/doughy. I’d reduce the liquid in the dough by a tablespoon next time to account for all the extra moisture the pickles release into the dough once they’ve been folded in. I’d probably dab them dry before adding them into the dough too. I think the dehydrated pickles really helped to add flavour but they took 4 hours on a really low temp in the oven to dehydrate so I won’t be doing that again any time soon and the fact that they looked like slugs sort of gave me the ick 😂🐌 All in all, I think dill pickle can focaccia with a few tweaks. I think the salt in the brine killed a lot of the yeast. Maybe stick to using the brine when dimpling! :)
