All those answers are wrong. They are different species of tuna fish. Eating raw or seared tuna you will be eating a high grade of tuna aka Ahi tuna, big eye , yellowtail. Canned tuna fish is albacore

If you take a cheap raw tuna steak and cook it well done, it will taste similar to canned tuna. The color and the texture really change a lot from raw to overcooked. It’s like salmon but more extreme
