✨7 Days of One Skillet Dinners: Turmeric Rice + Chicken✨ 1.5 tbsp neutral oil 1 small onion diced 1 lb chicken thighs S+P to taste 1 tbsp turmeric (start with 2 tsps if you’re not sure of the flavour!!) 1/2 tsp cinnamon 1.5 cups rinsed basmati rice 3 cups water 1 tbsp butter, diced 1 tsp salt (more as needed) 1/2 - 1 cup frozen peas Parsley to garnish In a medium skillet, heat up oil. Add in onion and cook 2-3 minutes. Add in seasoned chicken thighs in a single layer (over medium heat) season generously with turmeric. We also add some cinnamon (it’s not that strong in taste!) Cook about 5 mins per side. Then add in water, rinsed rice and butter. Season well with salt. We are using plain water, not broth, so it needs some salt! Cover and cook for about 15 minutes. Fluff up a bit with a fork or spatula and make sure you mix the edges of the pan with the middle. The edges will cook much quicker and also will have less moisture, so we need to combine it well. Add in peas, cover and cook an additional 5 minutes till rice is cooked through.
