PALAK PANEER 🌱My version using sweet potato leaves and tofu. It’s not traditional but still so delicious!  - 350g spinach (or sweet potato leaves) - 1 medium tomato, quartered - 3 garlic cloves, whole - 1 inch ginger, sliced - 2 green chillies  - Neutral oil, to cook - 2 garlic cloves, minced - 1 onion, finely chopped - 1 tsp garam masala - 1/4 tsp turmeric powder - 1/2 tsp ground cumin  - 1/2 tsp red chilli powder - Salt, to taste - 1/2 tbsp raw sugar (optional) - 2 tbsp cream - 250g paneer, cut into cubes (or firm tofu) - Fresh lemon juice, to taste - 1/2 tbsp kasuri methi (dried fenugreek leaves) Add spinach and a pinch of salt to boiling water. Cook for 2 minutes then dunk in cold water to cool down. Squeeze gently to remove liquid then transfer to a blender with tomato, whole garlic cloves, ginger and green chilli. Blitz until smooth.  Heat some oil in a pan over medium heat and fry off the garlic until fragrant. Add the chopped onion and sauté for 5 minutes until softened. Add the spinach puree in and mix well, cooking for 2 minutes. Add half a cup of water, mix and let simmer with the lid on for 10 minutes, stirring every now and then.  Remove the lid and mix in garam masala, turmeric powder, ground cumin, chilli powder, salt and sugar. Cook for 1 minutes then mix in the cream. Stir in the paneer (or tofu) and simmer for 3 - 4 minutes. Turn off the heat and mix in lemon juice to taste and dried fenugreek leaves. Serve immediately with rice or flatbread.
