Cheesy stuffed peppers - you gotta do these! I also have an ebook with more easy lowcarb recipes on my profile! . These are an easy, lowcarb meal that is packed will all the right flavors. We’ll start by sautéing 1/3 cup of finely diced onion (yellow or red works) with 3-4 thinly sliced garlic cloves in 1 tbsp of oil until it becomes translucent. Season it with a couple pinches salt, pepper, 1 tbsp oregano, and 1/2 tbsp chili flakes (or Aleppo pepper). Add in 1/2 to 3/4 cup of thinly sliced mushrooms, 2 to 3 tbsp tomato paste, and 1lb ground beef. Break up the meat continuously to make sure its finely minced and everything is mixed well together. You don’t want chunky meat here, so keep breaking it up using a spatula and take it off the heat right before it looks to be fully cooked. . 3.Remove the meat filling from the stove and stuff the peppers with 2-3 tablespoons of the filling. You’ll have some left over. Top it with a slice of fresh mozzarella, some jalapeño spices, chili flakes, and some more shredded mozzarella (about 1/4 cup in total) on top. . 4.Optional, drizzle the top with some olive oil, then put it in the oven at 400F for 20-25 minutes. Time varies by oven, so just keep an eye on it around the 20 min mark. . You can eat these as is, or serve them along with a salad, or your favorite side. .
