breakfast bowl recipe below ✨ can’t stop making this for breakfast so it’s time to finally share the recipe!!! it only takes about 20 minutes to throw together and tastes absolutely delicious 🫶🏼 Ingredients: -1 small potato -1 bell pepper (or 3-4 small ones) -1/4 onion diced -olive oil -salt -pepper -paprika -butter -2 eggs -avocado slices -cherry tomatoes -feta -dill -toasted bread Instructions: 1. Dice your potato and add to a bowl with olive oil, salt, pepper and paprika. Mix well and set aside. Dice your onion and bell pepper. 2. In a large pan heat some olive oil on medium high heat. Add your onion and bell pepper. Sauté 4-5 minutes until translucent then add your potato. Cook for 5-10 minutes until potato is cooked through and a bit crispy on the outside. Season with more salt and pepper as needed. Set aside. 3. Melt butter in the same pan and cook your eggs. I like fried eggs but do whatever kind you want! Season with salt and pepper and set aside once cooked. 4. Assemble bowl. Add your potato mixture, eggs, avocado, diced cherry tomatoes, and feta. Top with dill and more salt and pepper.
