Chipotle Chicken Burrito Recipe 🌯 Ingredients: For the chicken: - 2 lb boneless, skinless chicken breast or thighs, cut into cubes - 6-8 chipotle peppers in adobo sauce (adjust to taste) - 3-4 garlic cloves - Salt, to taste - 1 tsp garlic powder - 1 tsp onion powder - 1 tsp black pepper - 1-2 tbsp lemon juice - 3 tbsp oil For the chipotle yogurt sauce: - 5-6 tbsp plain yogurt - 2 tbsp mayonnaise - 1 tbsp lemon juice - Salt and pepper, to taste - 1 tsp garlic powder - 1 1/2 tbsp reserved chipotle sauce (see below) - 1 tbsp freshly chopped parsley For the salsa: - 1 red onion, chopped and washed in salt water to remove bitterness - 2 tomatoes, diced - 1 tsp freshly chopped parsley - 1 tbsp lemon juice - Salt, to taste To assemble: - 8 tortilla wraps - 1 cup mixed cheese (Monterey Jack, Cheddar, mozzarella etc.) - Salsa - Lettuce - Sour cream - Guacamole Method: 1. Make the marinade: In a food processor, blend chipotle peppers, garlic cloves, lemon juice, salt, and pepper until smooth. Reserve 1 1/2 tbsp of the marinade for the chipotle sauce. 2. Marinate the chicken: In a large bowl, combine the chicken and marinade mixture. Add oil and mix well. 3. Cook the chicken: Heat a skillet over medium-high heat. Add the chicken and cook until browned and cooked through. 4. Make the chipotle yogurt sauce: In a bowl, combine yogurt, mayonnaise, lemon juice, salt, pepper, garlic powder, and reserved chipotle sauce. Mix well. 5. Assemble the burrito: Add cooked chipotle chicken, chipotle yogurt sauce, mixed cheese, salsa, lettuce, sour cream, and guacamole in a tortilla. Wrap it by folding sides and make a burrito  6.
