Make sure it floats (that means its active!). Then Combine flour and salt wirh the water and sourdough mixture. Mix by hand until just incorporated. 2️⃣ Stretch & Folds: Over the next 2 hours, complete 4 rounds of stretches and folds (1 every 30 mins). To stretch, grab one side of the dough, gently pull it up, and fold it over itself. Rotate the bowl a quarter turn and repeat until you’ve stretched each side. 3️⃣ Bulk Rise: Cover the dough and let it rise at room temperature until it’s doubled in size. 4️⃣ Cold Ferment: Place the dough in the fridge for a 12-48 hour cold ferment. This slow rise deepens the flavor. 5️⃣ Shape: Remove dough from the fridge and let it warm up slightly (around 30 mins). Divide it into 2 even pieces. Working one at a time, gently flatten and fold each piece into a rectangle, then roll it up into a log. Twist each log to create your baguette shape. 6️⃣ Bake: Preheat the oven to 250°C (485°F) with a baking stone or steel if you have one. Place an ice cube on a small tray or directly on the oven floor for steam. Bake baguettes for 25-30 mins or until deep golden. Tips: The ice cube creates steam for a crispy crust.
