@freshofftheraq: Actually Quick Meals ep 6: Brothy Miso Beans 🫘🥣 2 tbsp olive oil or vegan butter 6 green onions, thinly sliced, greens and whites separated 3 cloves garlic, minced 1 can white beans, (cannellini or butter beans would both work) 2 cups low sodium veggie broth 1 piece of dried kelp (kombu) 2 tbsps miso 1 tbsp sesame oil 1. Heat oil in a large skillet over medium heat, sauté whites of green onion until translucent, about 2-4 mins. Add garlic and sauté for 1-2 minutes. Add beans, broth and kelp and stir. Simmer for 10-12 minutes over medium-low heat. 2. Turn off heat, fish out the kelp and stir in miso, sesame oil and greens of green onion. Serve on its own or with steamed rice or toasty bread.
