• DATE SNICKERS • If you are looking for a slightly healthier but delicious snack alternative, look no further than Date Snickers 👌🏻 For best results used Medjool dates as they have a lovely texture and flavour but any will do. These work out at 3 points or 111 cals each and are the perfect mouthful with a cuppa. You can store them in the fridge or freezer depending on how cold you like your snacks! Recipe below ⬇️ Makes 18 - 3 points or 111 cals, 3.5g fat, 20.9g carbs, 1.5g protein INGREDIENTS 18 Medjool dates, pitted 72g smooth peanut butter (half tsp 4g dollop in each) 60g chocolate (I like milk but you can use dark) 5g coconut oil Sprinkle of sea salt METHOD 1. Pit the dates and place in a baking paper lined freezer friendly bowl. 2. Stuff each with 1/2 tsp peanut butter (4g each) - I weigh out the first one and eyeball it after that 3. Break up the chocolate into a bowl, add the coconut oil and melt in the microwave. I do this in 30 second intervals so it doesn’t burn. It usually takes me 90 seconds in total. 4. Drizzle with the chocolate until it’s all used up (you can toss the dates in it either) 5. Finish with a sprinkle of sea salt on each 6. Pop in the freezer for a few hours and then enjoy!
