Roll out the dough into long strips, about 80 cm in length. Shape them and place them on a baking tray. Stack 6 small dough pieces on top of each other and shape them into a rose-like pattern. Place these in the center of the simits. 9. Let the shaped simits rise for 25 minutes at 25°C (room temperature) until they double in size. 10. Once risen, lightly spray or brush the simits with water. 11. Preheat your oven to 230°C and place a heatproof dish with water on the bottom rack to create steam. 12. Bake the simits for about 15 minutes, or until they are golden brown and crispy. Enjoy your simit!
