Toom is so versatile that I use it in the burger mixture instead of using mayo or eggs and I also use it as a condiment on top of the smash burger! #sogood #toom #smashburger #lebaneseinspired INGREDIENTS 1 pound ground chicken breast ½ cup breadcrumbs 2 tablespoons Toom 2 tablespoons minced onions 1 teaspoon dried parsley ½ teaspoon cumin ½ teaspoon paprika ½ teaspoon salt ¼ teaspoon black pepper 2 tablespoons olive oil 6 small greek-style pitas, for serving Lettuce, tomatoes and pickles, for serving INGREDIENTS 1. In a medium bowl, add ground chicken, breadcrumbs, Toom, onions, parsley, cumin, paprika, salt and pepper. Use your hands to combine all the ingredients together until blended, but don’t over mix. 2. Heat olive oil in a nonstick skillet over medium heat. 3. Scoop ½ cup of the chicken mixture and add it to a pita. Press the chicken on the pita surface to flatten it. Transfer it to the heated skillet chicken down and cook for 3 minutes until the chicken looks browned. Flip and toast the other side of the pita for 2 additional minutes. Repeat with the remaining chicken mixture and pitas. 4. Remove from the skillet and top with tomatoes, pickles, Toom and parsley. Fold in half and enjoy.
