✨This is my carrot cake recipe, it’s soft, perfectly spiced, and so moist. Topped with a rich cinnamon cream cheese frosting and finished with a drizzle of homemade salted caramel, it has the most irresistible touch.✨ ~Cake Batter • 3 large eggs • 100 g granulated sugar • 100 g brown sugar • 150 g olive oil • 100 g full-fat Greek yogurt • 250 g all-purpose flour • 300 g finely grated carrots • 2 tsp ground cinnamon • ¼ tsp ground ginger • ½ tsp salt • 2 tsp baking powder • 1 tsp vanilla extract • ½ cup chopped walnuts (optional) ~Cinnamon Cream Cheese Frosting • 8 oz (226 g) cream cheese, softened • 1 stick (113 g) unsalted butter, softened • 2½ cups (300 g) powdered sugar, sifted • 1 tsp vanilla bean paste (or vanilla extract) • ¼ tsp ground cinnamon • Pinch of salt ~For Decoration • Homemade salted caramel sauce • Chopped walnuts (optional) ~Instructions 1. Preheat the oven to 350°F. Grease and line an 9x9 inch cake pan with parchment paper. 2. In a large bowl, whisk together the eggs, granulated sugar, and brown sugar until the mixture becomes slightly lighter in color. 3. Add the olive oil, Greek yogurt, and vanilla extract. Whisk until smooth and well combined. 4. In a separate bowl, whisk together the all-purpose flour, cinnamon, ginger, salt, and baking powder. 5. Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix. 6. Fold in the grated carrots and chopped walnuts, if using. 7. Pour the batter into the prepared cake pan and spread it into an even layer. 8. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. 9. Let the cake cool completely before frosting. 10. To make the frosting, beat the butter until smooth and creamy. Add the softened cream cheese and beat until fully combined. 11. Mix in the vanilla bean paste, cinnamon, and a pinch of salt. Gradually add the powdered sugar and continue beating until the frosting is light, fluffy, and smooth. 12. Spread the frosting evenly over the cooled cake. 13. Finish with a drizzle of my homemade salted caramel sauce and garnish with chopped walnuts, if desired. #carrotcake #caramel #EasyRecipe #cakedecorating #CapCut
