Heat a large braising pan over a medium heat. 2. Render the bacon until crispy, then remove from the pan and chop. 3. Season the chicken thighs with salt & pepper, then dust them with all-purpose flour. 4. Sear the chicken thighs in the rendered bacon fat for 3-4 minutes per side. 5. Add carrots, celery, and onion, diced into bite-sized pieces, into the braising pan and sweat for 5 minutes. 6. Add the remaining all-purpose flour, and let the bacon fat and flour combine and reduce for 3-4 minutes until they become a paste. 7. Deglaze with red wine and let the wine reduce. 8. Add chicken stock, and cover the pan with a lid or aluminum foil. 9. Cook on a medium-low heat for 90 minutes. 10. Towards the end, add the juice of 1 lemon to the sauce, being careful to avoid seeds. 11. Serve with roast potatoes or pasta.
