Paneer bhurji roti wrap with Greek yogurt chutney, made from scratch, rolled tight, and seared right 🌯✨ Recipe ⬇️  Ingredients: • 1 cup whole wheat flour • 1 liter grass-fed whole milk • 2 tosp lemon juice • 1 small onion, chopped • 1 small tomato, chopped • 1 bell pepper, chopped • 1 green chili (for bhurji) • 2 cloves garlic, minced (split between bhurji & chutney) • 1 tsp grated ginger • 1/4 tsp turmeric • 1/2 tsp cumin seeds • 1/2 tsp garam masala • 1/2 tsp red chili powder • Salt to taste • 1 tosp cold-pressed olive oil • Fresh cilantro • Fresh greens (lettuce/spinach) • 1/2 cup zero-fat Greek yogurt • 1/4 cup mint & coriander • 1 small green chili (for chutney) • Lemon juice (to taste, for both bhurji & chutney) Instructions: 1. Make Paneer: Boil milk, add lemon juice to curdle, strain curds, rinse, press 1 hour. 2. Make Roti: Knead flour and water, roll, cook on pan. 3. Make Bhurji: Heat olive oil, saute cumin seeds, garlic, ginger, onion, bell pepper, tomato, green chili, turmeric, red chili powder, salt, garam masala, and lemon juice. Add crumbled paneer and cilantro. 4. Make Chutney: Blend zero-fat Greek yogurt, mint, coriander, green chili, garlic, salt, and lemon juice until smooth 5. Assemble & Cook: Spread chutney on roti, add bhurji and greens, roll up tightly. Lightly saute the wrap on a pan with a little olive oil until golden and warm. 6.
