I’m lazy, if it is just me I pour beaten eggs on top of my rice in the rice cooker the last 2 minutes. Or if I’m making extra rice, I microwave scramble eggs. We eat this 3X a week, at least

Love the idea of fried rice but never enjoy it, everything becomes the same and often too greasy. This is a great way of doing it. Love this.

Similar dish from NYT: brown butter, add eggs & 1tsp each soy sauce & sesame oil. Cook until whites set. Serve over rice. 🤤

Try making the eggs basted runny yolk over the rice and let the yolk coat the rice, it’s so good!!

We do something similar w/ cooked arboreal rice we add onion garlic a touch of fish sauce & soy sauce mix it all up in a frying pan (egg goes in last) until it’s slightly browned & crunchy SO YUM👌🏽

Have you tried the egg fried rice at Din Tai Fung? Might be the right type for you. Light, clean and not filled with oil.

My mom didn’t either. She used to put cooked rice in a sauce pan, make a well add butter and scramble the eggs into the rice.
