These are my Dubai-style brownies: fudgy center, crispy kataifi crust (note: kataifi is not gluten-free), pistachio cream, and silky chocolate ganache 🤎✨ Brownie Base: • 170 g unsalted butter • 150 g dark chocolate (60–70%) • 25 g unsweetened cocoa powder • 100 g coconut sugar or brown sugar • 50 g white sugar • 2 large eggs + 1 yolk • 1 tsp vanilla extract • ½ tsp salt • 50 g almond flour • 45 g gluten-free flour (1:1 blend) • 1 tbsp cornstarch (8 g) • (Optional) ½ tsp espresso powder • (Optional) 50–100 g chocolate chips or nuts Steps: 	1. Add vanilla and salt. Slowly pour in the chocolate mix. 	5.	Fold in flours + cornstarch. Add espresso/chocolate chips. 	6.	Pour into pan. Tap gently. Bake 28–32 min. 	7.	Cool at least 1 hour (chill for clean slices!). ⸻ 🥄 Kataifi Topping • 180 g kataifi • 70 g butter • 3–4 tbsp pistachio cream cook kataifi + butter over medium heat until golden. Turn off heat and mix in pistachio cream. ⸻ 🍫 Ganache • 120 g dark chocolate • 100 g heavy cream • 15 g butter Melt everything together over low heat. Stir until smooth. Pour over cooled brownies. Final Assembly 	1.	Once brownie is cool, spread the kataifi crust evenly on top. 	2.	Pour the ganache over the kataifi layer. 	3.	Chill 1–2 hrs for clean slices & extra chewy texture. 	4.
