Pizza Sandwich Recipe  Ingredients Pizza Dough 500g “00” Flour 325 water 12g salt 7 g dried yeast Roasted Red Pesto: 3-4 red capsicums 2 tbsp pistachios, lightly toasted 1 garlic cloves, peeled 1/3 cup basil leaves 2/3 cup Parmigiano Reggiano, grated 1/4 cup Extra Virgin Olive Oil Salt and pepper to taste Rocket Prosciutto 2 Italian sausages (remove from skin and cook in a pan) Burrata In a large bowl add in water and yeast using a spoon to bring together until yeast has dissolved. Then place in half the flour and salt. Mix together then add in remaining flour. Turn onto a floured surface and knead for 10 minutes Place dough back into the bowl and let sit for 2 hours. After resting, divide into 3 pieces roughly 250-260g each and place into a slightly spoiled container with a lid. Let sit overnight or until doubled in size. Red Pesto Roast capsicums in oven on the  20-30 minutes or until nicely charred. Place into a bowl , cover with cling wrap and let sit for 10 minutes before removing the skin and seeds from the inside. In a food processor, combine 300g of the roasted red capsicums, toasted pistachios, garlic clove, basil leaves, Parmigiano Reggiano, olive oil and salt and pepper. Blend together and set aside. Once dough has fully proofed, press and stretch out on a floured surface. Brush the inside of the dough with avocado oil and close over. Flour the pizza peel and place dough on. Slide pizza dough onto the stone and cook for around 2 minutes. Check halfway to see progress you’re looking for a bit of char on the top but not too much. To assemble, open the pizza bread and spread red pesto onto the base. Lay down some rocket followed by some burrata, prosciutto and then top with cooked italian sausage.
