Mediterranean Turkey Meatballs: -1 lb ground turkey -1/2 cup bread crumbs -1 egg -1 large spoonful of chili garlic sauce -1 roasted red pepper, diced (I used peppers from a jar) -handful of fresh dill, chopped -handfull of fresh parsley, chopped -handful of fresh chives, chopped -spoonful of crumbled feta -1 tsp salt -1/2 tsp pepper -1/2 tsp paprika -1/2 tsp onion powder -1/2 tsp garlic powder Add all ingredients to a bowl and mix until combined, but don't over mix. Shape into 1 inch balls and place on a lined baking sheet. I coat my hands in olive oil first to prevent it from sticking to my hands. Bake for about 11-12 minutes at 425 degrees. I use a meat thermometer to double check they have reached 165 degrees internal temperature. Sweet Potato Fries - Peel and cut your sweet potatoes into French fry shape. Try to keep the pieces as uniform as possible so they bake more evenly. - Let soak in ice water for 30 min to an hour - Preheat your oven to 425. - Strain the potatoes and pat dry. - Coat in olive oil, a little bit of cornstarch, and seasonings. I used salt, pepper, garlic powder, onion powder, and paprika. - Lay out on a baking sheet sprayed with cooking spray in a single layer. Make sure no fries are overlapping or else they won’t cook properly. - Roast in the oven at 425 for about 20 minutes or so before taking them out and flipping with a spatula (they will still be kind of soft, so try your best to scoop all the way under them so they don’t break) - Roast for another 10 minutes before taking them out and topping with some freshly grated parmesan cheese. - Put back in oven and roast another 10 minutes, or until fries are at desired crispiness. #dinner #DinnerIdeas #dinnerrecipe #dinnerrecipes #dinnerinspo #mealinspo #mealideas #easydinnerideas #easymeals #cooking #turkeymeatballs
