INGREDIENTS: 🍗 Chicken (Skinless - I used 3 thighs and 3 drumsticks) 🍅 5 whole tomatoes (blended) 🍅 3 tbsp tomato paste 🧂 Salt & Pepper 🫚 1 tsp minced ginger 🧄 1 tsp minced garlic 🍙 1 tbsp sugar 🫙 1–2 tbsp Cumin (ground) 🫙 1 tsp cinnamon (ground) 🫙 ¼ tsp cloves (ground) 🫙 1 tsp cardamom (ground) 🌊 1½ cup water 🥛 ½ cup natural yogurt 🧅 6 onions Sliced (Deep fried until golden and crispy) 🥔 3 large potatoes (peeled; halved & deep fried) TIPS: 1. Why skinless chicken? In this application where we aren’t searing the chicken fat, this helps avoid a wet, stewy and rubbery chicken fat. So what to do with the skin? You can render the chicken fat and enjoy the skin as a crispy snack! 2. You can start frying your onions and potatoes as your chicken cooks, however, cook it on low heat to avoid overcooking the chicken or undercooking the potatoes and onions. 3. Feel free to sub in pilau masala for the spice blend. The two are pretty similar in flavor profile!
