Gochujang ingredients: - 1 cup water - 2 tbsp salt (or more, to taste) - 1 cup soybean powder - 1 cup Korean red pepper powder (gochugaru) - ½ cup rice syrup or corn syrup 1. Mix all the ingredients well in a bowl. 2. Transfer the mixture to a clean, airtight container. 3. Let it ferment in a cool, dark place for at least 3 days or more. Tteokbokki ingredients: - 500g Korean rice cakes - Mozzarella cheese - 600mL vegetable stock Sauce: - 2 tbsp gochugaru powder - 2 tbsp gochujang - 2 tbsp soy sauce - 2 tbsp sugar - 1 tbsp neutral oil •Mix all the sauce ingredients in a bowl and set aside. •In a pot, bring vegetable stock to a boil.
