Add the red food coloring and vanilla extract, and mix until the color is evenly distributed. * Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the white chocolate chips. * Cover the cookie dough and refrigerate for at least 1 hour. Chilling the dough helps the cookies hold their shape during baking. * Once the dough has chilled, take about 2 tablespoons of dough and flatten it into a disk. Place the frozen cream cheese filling in the center and fold the dough around it, sealing the edges. Roll it into a ball, ensuring the cream cheese filling is completely covered. * Place the filled cookie dough balls on the prepared baking sheet. * Chill the shaped cookie dough balls for atleast 30 minutes. * Bake the cookies in the preheated oven for 7-9 minutes or until the edges are slightly golden.
