Ghost Meringues with Raspberry Sauce 👻❤️ Makes 8–10 ghosts Ingredients Ghost meringues * 4 large egg whites, room temperature * 1 cup granulated sugar * ¼ tsp cream of tartar * 1 tsp vanilla extract * 2 tbsp melted dark chocolate, for the eyes Raspberry sauce * 2 cups fresh or frozen raspberries * ¼ cup sugar * 1 tbsp lemon juice * 2 tbsp water * Fresh raspberries, for serving Instructions 1. Heat oven to 225°F. Line a baking sheet with parchment paper. 2. In a clean, grease-free bowl, beat egg whites and cream of tartar until soft peaks form. 3. Add sugar gradually, about 1 tablespoon at a time, beating until the mixture forms stiff, glossy peaks and feels smooth when rubbed between your fingers. Beat in vanilla. 4. Transfer to a piping bag fitted with a large round tip. Pipe tall ghost shapes, lifting and gently turning the tip to create little curls. 5. Bake for 1½–2 hours, until dry and easily lifted from the parchment. Turn off the oven and let cool inside for at least 1 hour. 6. Use melted chocolate to pipe two oval eyes onto each cooled ghost. Let set. 7. For the sauce, combine raspberries, sugar, lemon juice and water in a saucepan. Simmer for 5–8 minutes, stirring and gently crushing the berries. Cool completely. 8. Serve ghosts over a spoonful of raspberry sauce with fresh berries.
