The Food Labs has a truly brilliant method - fixed amount of apples to a fixed amount of boiling water for a fixed amount of time for perfectly cooked apple filling every time.

i precook w sugar, b sugar, lemon juice, pumpkin pie spice, and vanilla then bake for another 30-40 mins 🙏

IF you arrange the slices i stead of dumping them in, they don't have a place to collapse & you dont get a big gap in the top crust.

1 is good if you want to add another filling to it, bit 2 and 3 are better to just eat by itself
