Ingredients 1.5 tsp oil 2 Garlic Cloves 60 Gm onions 60 gm Mix Bell Peppers 30 Gm sweet corns 100 Gm Black Beans 120 G Extra firm Tofu Salt & Red Chilli Powder as taste Method : Roast Tofu In a bowl, add 1/4 tsp garlic powder + 1/4 tsp red chilli powder + Salt as taste. Roll tofu cube in this spice mix. Spray oil on a non-stick pan and roast from both sides until golden brown. Beans & Tofu Prep In a pan, add oil + garlic, sauté for a min. Then add finely chopped onions. Sauté for another 2-3 min. Then add bell peppers, corns and beans along with spices. Mix everything well and let it cook for 6-8 min. Add roasted tofu, give it another mix and it’s ready. Quinoa Burrito Bowl Add salad in a plate with 80 Gm boiled quinoa + lettuce & mint dressing which is prepared with 20 g yogurt and 2 tsp mint.
