This is a new fav for sure😋 Save for later✔️ Potato Soup Recipe📖 Ingredients: -3lb mini yukon gold potatoes - 8 strips of cooked bacon, chopped (my husband did this outside on the black stone) - 2 Tbsp bacon grease (I keep a jar of it in the fridge) - Minced garlic (about 1 Tbsp) - Can also add onion as well (I did this separately bc I don’t like onion) - 1/4 cup flour - 2 cups milk - 1 cup heavy cream - 4 cups chicken broth - 1 tsp salt - 1 tsp pepper - 1 tsp onion powder - 1 tsp chicken bouillon - 2 cups cheddar cheese - Top with cheese, bacon, sour cream and green onions! Instructions: 1. In a large pot add bacon grease and minced garlic (and onion if using) 2. Add in your flour and stir for about 1min 3. Slowly whisk in heavy cream, milk, and chicken broth one at a time. 4. Add in seasonings. Stir to combine. 5. Add in potatoes and bring to a boil. Boil until fork tender, about 15-20 minutes. 6. Optional: use a potato masher to break into smaller pieces 7. Reduce heat to medium-low. Add in your cheddar cheese and bacon (leave some for toppings) ENJOY!!
