Khinkali Dumplings 🥟🇬🇪 Introducing Georgia’s national dish, the humble yet glorious Khinkali! A massive twisted soup dumpling, made from flour, meat, herbs and spices all packed to deliver one of the most satisfying bites. They say the more twists there are on the top, the better. Don’t forget to top this with plenty of pepper and enjoy! INGREDIENTS: For the Dough:
- 1,000 g All-purpose flour
- 2 tsp salt
- 400 ml warm water For the boiling liquid:
- 1 Bayleaf
- 1 tbsp salt For the filling:
- 500 g ground beef
- 500 g ground pork
- 3 onions, finely chopped
- ¼ tsp caraway seeds
- ½ tsp black pepper
- 1 tsp salt
- ¼ tsp allspice
- 1 cup refrigerated beef stock INSTRUCTIONS:
- To make the dough, in a large metal bowl place all purpose flour, salt and water. Knead the mixture until homogenous. Cover the mixture with cling wrap and store at room temperature while you make your filling. Ideally you’ll want to leave it to rest for 30 mins.
- In a separate bowl, add your ground beef and pork along with finely chopped onions and 1 cup of your refrigerated beef stock. Add toasted caraway seeds, black pepper, salt, and allspice and begin combining the mixture with your hands. Do this until the filling is well combined.
- Roll your dough into a log and cut it lengthwise into 1-2 inch discs. Roll those discs out into a flat circle using a rolling pin. Add the filling to the center and pinch and fold the sides until you form many pleats. Tie it all up by twisting at the top to form a central stalk.
- In a pasta pot or large sauce pan, bring water to a boil before adding salt and a bay leaf. Add your Khinkali dumplings into the pot and let it boil for 10-15 mins. Fish out the dumplings.
- Serve your dish topped with freshly cracked black pepper, and don’t forget to drink the broth. Serve and enjoy!
