@tarasvegantreats: Did anyone else used to hate quinoa when it was forced upon us as a vegan staple?!😂 let me know if you fancy more substantial summer salads🥗 INGREDIENTS 200g white quinoa 2 medium sweet potatoes 100g cavolo nero kale 1 tablespoon smoked paprika 1 tablespoon ground garlic 1 tablespoon ground cumin Half a red onion Handful of rocket Toasted pine nuts Olive oil Sea salt ——————— 100ml balsamic vinegar 70g black olives 100ml olive oil 4 garlic cloves 1 lemon for juice METHOD 1] Peel, cube & roast sweet potato in olive oil & salt for 35-40 mins 2] Rinse & boil quinoa until fluffy, transfer to a new baking tray, flavour with cumin, paprika & garlic. Drizzle with olive oil & toss to coat evenly. Bake for 30 mins 3] De-stem & roughly tear kale, massage with olive oil & add to the oven for final 10-12 mins of everything else 4] Whizz together dressing ingredients until smooth, store in fridge until serve 5] Add sweet potato, quinoa & kale to a large salad bowl when cooled. Followed by shaved onion & fresh rocket 6] Pour over dressing & toss.
