Ingredients: - 1 red onion - 3 tomatoes (small to medium) - 30-40 green chilli’s - 1 red pepper (small) - 1 green pepper (small) - 1 whole garlic - thumb size ginger - 1 handful fresh coriander - juice of 1 lemon - juice of 1 lime - salt (to taste) - cooking oil - 1 tbsp Dad’s chili oil Method: - Heat few tablespoons of cooking oil in a pot over medium heat. - Saute the onions for a few minutes until softened. - Stir in the peppers and sauce for another couple of minutes. - Add the minced ginger and garlic. Stir well and cook for about 30 seconds until fragrant. - Mix in the tomatoes and cook until softened, stirring occasionally. - Add the green chilis and coriander. Continue to cook, stirring frequently, until everything is well combined and the mixture thickens slightly. Add about 1/4 cup water to adjust consistency. - Blend the mixture until smooth, then cook for another 25-30minutes. It’s ready when the oil separates. - Add lemon and lime juice. Season with salt to your taste. - Let it rest for an hour or so to let the flavours develop.
