Pavlova with Strawberries & Pear🍰🍓🍐 Ingredients: For the Meringue: 4 egg whites 225g (8 oz) granulated sugar 5 tsp cornstarch 1 tsp white wine vinegar For the Whipping cream: 250ml (1 cup) whipping cream 30g (2 tbsp) granulated sugar For the Vanilla Mascarpone cream: 250ml (1 cup) whipping cream 30g (2 tbsp) powdered sugar 250g (1 cup) mascarpone 1 tsp vanilla extract Toppings: 8-10 strawberries 1-2 pears 1 lemon Few sprigs of rosemary Few mint leaves Small piece of chocolate (I use sweet) Method: 1. Start by preheating the oven to 120°C (250°F). 2. Beat the egg whites to soft peaks. 3. Add the granulated sugar and mix briefly. 4. Put the cornstarch through a sieve into the bowl and stir gently. 5. Finally, add the white wine vinegar and stir gently again. 6. Place the beaten egg white mixture on a baking tray lined with baking paper. And spread it into a circle about 20cm (7.9 inches) in diameter and a few centimeters/inches high. 7. Run your spatula along the side to create some peaks. 8. Place the baking sheet in the oven for approximately 1 to 1 hour and 15 minutes. 9. For the freshly whipped cream, we put the whipped cream and the granulated sugar in a bowl and mix until hard peaks form. 10. For the Vanilla mascarpone cream, we put the whipped cream with the icing sugar in a bowl and mix it to soft peaks. 11. Mix the mascarpone with the vanilla extract in a bowl and then add this to the just whipped cream and mix well. 12. Cut the strawberries into quarters and the peeled pears into 1cm (0.4 inch) strips. 13. Divide the vanilla mascarpone cream over the baked meringue. 14. Then spread the whipped cream over the edge with a height of a few centimeters / inches. 15. Divide the fruit over the whipped cream and mascarpone cream. 16. Grate some lemon zest over the pavlova. About a quarter to half of the lemon. 17. Now divide the rosemary sprigs and mint leaves over the pavlova. 18. Finally, you can grate some chocolate over the cake with a fine grater.
