Everyone loves crispy shredded beef from their local Chinese takeaway so here’s my mum’s recipe for it 🥡🫶🏼🥢 Serves 4 For marinating the beef: 400g sirloin steak 2 tbsp light soy sauce  4 tbsp oyster sauce  2 tbsp shaoxing wine 1/2 tsp Salt 1/2 tsp MSG  1/2 tsp bicarbonate of soda  1/2 tsp ground white pepper 1 egg white  2 tbsp corn starch  350g potato starch  For the sauce: 4 garlic cloves  1 medium-sized white onion  1/2 red pepper  3 spring onions 1 glass of water  3 1/2 tbsp sugar  1 tbsp light soy sauce 3-4 tbsp tomato ketchup  2 tbsp Worcestershire sauce  2 tbsp rice vinegar  1 tbsp sesame oil 1 tbsp shaoxing wine  2 tbsp @mamayuoil garlic chilli oil  2 flat tbsp potato starch  1.5 litre vegetable oil Slice the beef against the grain, into thin strips. Marinate, then mix in the cornstarch until the beef is evenly coated.  Shake the excess starch off the beef. Pour vegetable oil into your wok on medium heat, place a chopstick in, if bubbles emerge the oil is ready.  For 1st round of deep frying, add the beef and cook for 3 mins. Remove, set on a lined rack, then add back into the wok for another 3 mins for 2nd round of deep frying, then set aside. Mince your garlic, slice your onions, red pepper and spring onions.  In a separate wok, fry your garlic with vegetable oil for a minute or so, then add the sliced onion, pepper and spring onions - fry for 2/3 mins on medium heat. Add the seasonings and sauces, mix well and cook until the sauce has thickened.  Pour the sauce over the beef and enjoy! #crispychillibeef #crispyshreddedbeef #chinesetakeawayuk #takeawayrecipe
