Black Pepper, Parmesan & White Cheddar Spritz Crackers for Day 14 of our Recipe Advent Calendar! 🎄 If you have a spritz cookie press sitting in your cabinet that only gets used once a year, these cheesy crackers will put it to good use!  They’re crisp and cheesy, with the perfect peppery kick. I would describe the texture as somewhat in between a savory cookie and cracker! (If you’ve ever had a cheese straw, that’s essentially what these are 😉)  This recipe makes a very large batch, which is perfect for holiday entertaining, but if you’re just making them for yourself, you may want to cut the recipe in half.  Black Pepper, Parmesan & White Cheddar Spritz Crackers (makes 100+) 12 ounces sharp white cheddar cheese, grated (room temperature) 4 ounces parmesan cheese, grated (room temperature) 1 ¼ cups (2 ½ sticks) unsalted butter, softened to room temperature 1 teaspoon kosher salt 1 ½ teaspoon black pepper 3 ½ cups all-purpose flour Preheat oven to 400˚F / 205˚C. Using a stand mixer fitted with the paddle attachment, add in the cheddar, parmesan, butter, salt and pepper. Beat on medium speed until smooth and creamy, stopping to scrape down the sides as needed until all ingredients are well incorporated.  With the mixer on low speed, slowly add in the flour. Continue mixing, stopping to scrape down the sides as needed, until the dough is well mixed.  Transfer dough to your spritz cookie press fitted with the shape of your choice. Pipe the dough directly onto the baking sheets (no parchment paper).  Bake the crackers for 8 minutes, until golden brown on the bottom. We bake them on the bottom rack of the oven for the first 5 minutes, then move them for the top rack for the last 3 minutes. Remove from oven and transfer to a cooling rack to cool completely.
