@oliveyousomatcha: Healthy meals do not have to be complicated. And you can make your life extremely easy if you prep ingredients at the beginning of the week. I always have hard boiled eggs and cut up fruit on hand. I also make a batch of grains and starches. Steel cut oats are always cooked in our fridge ready for the morning. It’s a little bit of an investment of time upfront, but it makes it incredibly easy to eat healthy meals all week long. This is how I make a healthy easy breakfast for an elderly family member and the rest of the family. today we went with Lola‘s breakfast casserole, as she calls it. She eats this pretty much every day and came up with herself. It’s loaded with nutrients and super simple for her to eat because it’s soft. It’s steel cut, oats, oat milk, poached, egg, Greek yogurt, and fruit. For the rest of the family I went with fancy toast. There have been a couple of places popping up that serves only fancy toast. Or you can always find it on menus at Café. And it usually runs between $12-$15 around here. Why spend that money when you can make a delicious version at home with ingredients you have laying around? for today’s toast, I went with sourdough bread, hard boiled egg, seasoned with chili oil, Mirin, soy sauce. I topped off with everything bagel seasoning, toasted, seaweed flakes, pickled onions, and micro greens. It was delicious! And then I served it with a bowl of melon that I always cut up at the beginning of the week. This whole meal took me about 10 minutes! ##elderlycare##seniors##elderlyparents##healthybreakfastideas
