@mariannas_pantry: HIGH PROTEIN SPINACH AND ARTICHOKE DIP Nutrition: serves 4 Per serving: 176 kcal 7g fat 13g carbs 17g protein Ingredients: 1 cup nonfat Greek yogurt 1 cup low fat cottage cheese (blended) 1 can of artichokes, drained and diced 2 cups frozen chopped spinach 1/2 cup low fat mozzarella cheese 1 tsp garlic powder 1 tsp onion powder Salt and pepper to taste Instructions: 1. Preheat oven to 425 F. Remove your spinach from the freezer and add 2 cups to a strainer to thaw in the sink. Once it is thawed place it in a dish towel and and ring out the excess water. Set aside. 2. Blend your cottage cheese until smooth, then add it to a large bowl along with Greek yogurt and mix. Add your chopped artichokes and spinach, along with onion powder, garlic powder, salt, and pepper. Mix until everything is well combined. 3. Transfer mixture to an 8x8 baking dish and top with additional mozzarella if desired along with Parmesan cheese. 4. Bake for 20 minutes, then broil for 3-5 minutes.
