For the filling, mix together the soft butter, brown sugar, and cinnamon until well combined. 4.	Once the dough has risen, roll it out into a large rectangle on a floured surface. Spread the cinnamon filling evenly over the dough. 5.	Fold the dough by bringing one side to the middle, and then fold the other side over it. Cut the dough into even strips. 6.	Slice each strip lengthwise into three parts without cutting all the way through, and braid them. Twist the braided strips into knots. 7.	Place the knots into a greased Muffin tin and let them rise for another 20-30 minutes. Preheat the oven to 180°C (350°F). 8.	Brush the knots with the egg yolk and milk mixture, and sprinkle with chopped nuts or almonds if desired. 9.	Bake the knots for 15-18 minutes until golden brown. Once out of the oven, let them cool slightly, then brush generously with maple syrup while they are still warm for a glossy finish.
