Making kimchi for my husband and I 🫶🏼 recipe below. Cut the base of a nappa cabbage (about 5lb cabbage) into quarters and slowly peel apart so you don’t tear the leaves. Put 5 cups of water in a large bowl and spread 1 cup of coarse salt over each leaf of cabbage. Let soak for 6-8 hours, flipping the bottom cabbages to the top every hour or so.  Drain and rinse cabbage 4 times then taste. If too salty, let soak in water for a bit and continue to taste until the cabbage is just right. Let drain in a colander while you prepare your kimchi paste.  In a saucepan, combine 1.5 cups water and dashima. Let boil for 3 minutes then remove your dashima. Add 1 tbsp glutinous rice flour to your dashima broth and whisk vigorously until combined. Simmer until it resembles a paste.  Combine your dashima paste, 1/2 cup gochugaru, 1/4 cup salted shrimp (squeeze out juice, chop then add), and 3 tbsp fish sauce. Separately blend 1 onion, 12 cloves garlic and 2 tbsp ginger and add to bowl. Mix until combined then add 1 korean or daikon radish, 1 korean apple pear and 1 bunch of scallions chopped. Gently toss to combine.  Spread paste on each leaf of cabbage, focusing the majority of the paste on the base and spreading outwards towards the green part of the leaf. Fold and store in an airtight container for 1-2 days or until gentle bubbles appear and taste is slightly sour.  Chop and store in airtight containers in the fridge. Burp container every 1-2 days.
