Cheesy Cabbage Beef Casserole Ingredients: - 1 medium cabbage, chopped - 1 lb ground beef - 1 onion, chopped - 2 garlic cloves, minced - 1 can (14.5 oz) diced tomatoes with juice - 1 cup cooked rice - 1 teaspoon Italian seasoning - Salt and pepper, to taste - 2 cups cheddar cheese, shredded - 1 cup beef broth Instructions: 1. Preheat your oven to 350°F (175°C). 2. In a large skillet on medium heat, brown the ground beef with chopped onion and minced garlic. Drain the excess fat. 3. Stir in the cabbage, cooking for around 5 minutes until it softens slightly, stirring occasionally. 4. Add the diced tomatoes, rice, Italian seasoning, salt, and pepper. Let the mixture simmer for about 5 minutes. 5. Move the mixture into a greased 9x13 inch baking dish. Pour the beef broth evenly over the top. 6. Sprinkle shredded cheddar cheese over the casserole. 7. Cover with foil and bake for 30 minutes. Remove the foil and bake for another 10-15 minutes until the cheese is bubbly and lightly browned.
