Charred Sweet Corn & Cucumber Salsa Ingredients: 4 pieces of corn on the cob, peeled and cleaned 8 mini cucumbers, small diced 1/4 sweet vidalia onion, small diced 2 limes, zested & juiced 1 serrano pepper, seeds removed, small diced 1 bunch cilantro, finely chopped 1/4 c olive oil pinch of sea salt pinch of black pepper Char the corn on an open flame on the stove (or you can use the grill). Set aside to cool before removing kernels from the cobs. In a large bowl, add corn, cucumbers, serrano pepper, onion, cilantro and lime juice & zest. olive oil, slat & pepper.
