lace with paracord, knot it then burn the edges :)) won't leave any excess and it's not gonna go anywhere. super durable.

You could start 'sewing' it from the top and when the strings match at the bottom just tie a bow!!!

if you want real leather ones solovair (the original docs manufacturer) make them to buy as add ons for their boots (which are sturdier and better than docs ;))
